Lamptron FC5 V2 Installed - Fan Speeds/Temp/Buy advice

Finally got round to buying & installing a Fan Controller.

Just want some advice to what speeds I should run the fans & any comments on the case temps.

Currently installed like this;
1: Top 2 x 120mm Fans connected via a 3-pin fan splitter (700-800 rpm) Unbranded value fans.
2: 120mm Rear Fan (600 rpm) Came with case.
3: 200mm Front Fan (700 rpm) Came with case.
4: 120mm Side Fan (1200 rpm) OLD FAN NEEDS REPLACING, old molex connetctor for power so cannot control speed via controller.

Any suggestions as to which 3-pin fan to change the side with? may swap the top 2 as well.

Connected the 4 temperature sensors at each point inside the case with mini cable ties;
1: Top case 82f
2: Rear case 82f
3: Front case 74f-75f
4: Bottom case 74f-75f

What orientation are the fans? i.e. intake or exhaust?

Personally for fan replacements I'd look into the new Bitfenix Spetre PRO range (Don't think OCUK have stock yet - hint hint)

Failing that Gentle typhoons, vipers/apache (4pin PWM however), any many many more may be a good fit, are you aiming for performance or silence?

Top 2 & Rear are exhaust

Does anyone know what's the extra pin wire is for?
Can I use 4-pin fans with a converter to 3-pin with this controller?

Aiming for performance without a doubt
