Hey, what sort of system would I need in order to achieve 60 FPS with every setting maxed out in games like Battlefield 3 and Crysis 2?

SLI gtx 580's i should imagine, 8gb of ram, i7 2700k (if your having sli 580's might as well push the boat out...) SSD in there i should imagine as well

A console will only run them games at about 600p with lower settings ;)

Indeed, but I stand by my comments that neither of those games requires SLI'd 580s. A single 580 or 7970 will give 60+fps at that resolution. Due to games designers having to design console friendly games, the days of needing top end SLI to get reasonable performance are gone.

At least until the next gen consoles are out and games are designed for them.

Depends on the game and what level of AA you want to use.
Obviously more VRAM is helpful at high resolutions.
Always amusing to read the requirement for SLI/Xfire.

Sli 580 or 6970 cf with gpu overclock

At least 2gb vram per card

When i had 6950 cf overclock it still struggled at some places in crysis, and that was 2560x1440, metro was the worst game to crack

Doubt you'd need SLI. Those games are console ports so not stupidly graphic intensive. 7970, 2500k, 8gb ram and SSD.

BF3 is a console port?

A single 7970 might be able to do it however, but I would feel more comfortable with two 6950 2gb/560 Ti/570 in xfire/sli instead.

Compared to £700 of 580s... £400 to play those games at those settings and that resolution is a bit of a bargain.. It's all relative.

Granted, BF3 does look considerably more taxing than Crysis 2 from the various reviews.

That's because the game was designed for PCs :p Infact I believe more than a million PCs were upgraded/replaced just to play it!

Another card OP can get is the upcoming 7950 that should be out on the 31st. It should be a good deal cheaper than the 7970, and should handle the game at around 580 level. Just my pure speculation but will have to wait and see for ourselves when it's out. Plus crossfiring it with that 3gb will definitely help with the scaling.
