The GT is identical to the Non-GT in all but the hard-top and the fixing kit.
If you have trouble finding a GT then it's pretty easy to fit the hard-top fixings to a Non-GT and buy a hard-top if you want it.
If it's an earlier model non-GT you would need to retrofit the heated screen wiring/switching as this was only introduced on Non-GTs with the glass rear window in newer models
One of the added bonuses of the GT other than the fittings being present and coming with a roof is that it sometimes can lower insurance compared to the non-GT Soft top only model.

Convertibles are awesome. The roof is not so much a roof, more an umbrella. If its raining put it up otherwise have it down. This is why a hardtop is crap. You cant just drop the roof totally randomly. You have to faff, so you wont bother. You'll spend half the year with a stupid hard top bolted to your car enjoying the disadvantages of a convertible without the advantages.
And you wont be able to get that great feeling that is driving a convertible when it's -2 outside.
