My GTX480 idles at 45*C and tops out at 90*C in cool weather, and idles at 55*C and tops out at 93*C in this blazing heat... Arctic Cooling Accelero Xtreme Plus is on the books for July :P

GTX470 SLI clocked to stock 480 performance... reference design/cooler.

Usually the fan doesn't get above 60% while gaming and temperatures are about 70C... today (measured 32C outside earlier) its pushing 86C on each card with the fans averaging about 78%... idle in this weather is a toasty 58C w/ 40% fanspeed... usually more like 45C/40%.
 
My 480's are overclocked to 825/1002 usually temps are ok, in this weather though they are running really hot, Afterburner custom fan profile has made things much better, but im putting these under water soon with Antec Kuhler 620 ghetto mod...

Gigabyte SOC gtx480 : idle 42 / 43, load... (depends on fan speed and game) but usually no more than the low 80's in this heat.

I should add that the core is running at 820, memory 1900 and shader @ 1645. Though, the shader doesn't seem to be showing on afterburner 2.2.1 for some reason.

Asus GTX 480, a later 480 with stock cooler, runs way cooler than the EVGA I had and with much lower fan speed. Below is 20 minutes of heaven looping at 825 core.

My 480 is at 865mhz, 2100 on the memory and never goes above 55c in game , idles around 34c, it is under water cooling though:)
