How important is VRAM?

What res do you play at? Also depends on the game.

SWTOR at 1200p uses less than 1GB on my 3GB card, but I've seen BF3 at around 2GB.

Also like everyone esle has asked, what resolution do you play at?
 
What's your budget for an upgrade? I'd rather put money towards a better monitor as well if you're gaming at that low res.

This is impossible to answer without any context. You aren't going to get any meaningful answer.
 
it's in your interest to give more details... like what games you play, what cards you're looking at, and budget. this way people can give you a better idea of how to spend your resources.

bitching aside, your monitor will not require more than 1gb, so under current circumstances and barring any future upgrades, go for the 1gb card. but as others have said, that there'll probably come a time when you'll want a higher res monitor. come then 1gb won't cut it.
