Veggie Meal Ideas Without Cheese In

My gf is a veggie but she doesn't eat cheese either, so that's most of the veggie meals I'm familiar with out. She doesn't really eat that much quorn or soya either so I don't just want to replace meat with that in every meal. When she returns to uni in September we shall be cooking more meals together so I'm after some veggie meal suggestions, either run of the mill or something a bit more special for when I have time to put a bit more effort in. If there are any which I can easily make a meat version for me that would be great (I don't really want to turn into a veggie :p but I'm open to eating slightly less meat than I do now)

So fire away with any suggestions

Learn to make Indian meals. Loads of Indian dishes are vegetarian, and loads of the vegetarian dishes don't contain any cheese.

In the meantime look for a new girlfriend.
 
Look at some Asian dishes with rice (e.g. vegetable curry), noodles, vegetables, tofu and maybe a bit of Quorn (I know you said she doesn't eat that much of it, but hide it away or mix it in and it makes life easier). Also, a nice nut roast would be good.
 
Made this curry last night, really quite nice

Some really nice veggie lasagne dishes out there. Other veg recepies here. Going to make the chickpea curry tonight and the spinach and thyme pasties for work - nom!

Does she drink protein shakes? If she doesn't even bother with veggie-protein options, I'd be concerned about her long term health.
 
Just try and look at in a different way, think off some meal ideas and then how you could make it without meat.

I'm veggie and I'm trying to cut down on cheese, granted this week has a couple of quorn products but we are having.

Chilli with beans, veggie toad in the hole, samosas and salad, homemade veggie pasties, aubergines with spicy chickpeas, mushroom burgers and Dahl with naan bread. All meat and cheese free with a bit of variety as well but generally doable in an hour.
 
Cooking sauces, loads of them. Curries, bolognaise, lasagne, chillis etc. Just stick vegetables in instead of meat, peppers, leeks, carrots, peas, beans, potatoes, etc etc.

I assume she can eat eggs? This opens up loads of meals. You can never go wrong with a omelette for example.

There are plenty of threads in here where people are asking for vegetarian recipes.

Vegetable stir fries are quick, simple and easy for you to add meat to as well if you feel like it - cook up the chicken or whatever you want in a separate pan and then add it at the end. You can make them with or without tofu/beancurd, generally I don't bother with tofu/Quorn/beancurd but it depends on what you want.

Stews, curries and soups can all be fairly simple, easy and tasty while not needing cheese or any dairy produce if that's an issue.
 
Asda's own veggie mince is alright, helped my gf when she was getting back on the meat......

Anyways, we don't use any other mince in our house now. It's not as spongy as other meat substitutes. We use it for our Mexican and Italian dishes etc.

So maybe like fajitas, veggie pastas etc both can be done sans F-ince

She doesn't. I am a little concerned about that and shall be trying my best to encourage her to eat more protein when I can. If you've any suggestions of ways to ensure more protein other than the more obvious sources (eggs, beans, nuts spring to mind) I'd be curious to hear them. This is the kind of thing that made me want to make a new thread as my main source of protein is meat and I don't have any intuition as to what a balanced veggie meal might contain
 
She does eat dairy, so eggs etc. are fine as a couple of people asked. She just gets migraines from eating cheese which is why that's specifically out

I know there are plenty without cheese, I just don't have much experience of cooking veggie and looking for protein sources other than that. My brother's peskitarian and when he doesn't eat fish or quorn everything contains cheese so I'm just after a few suggestions on veggie meals until I get a bit of intuition as to what constitutes a balanced meal really. I will have a search on here for other veggie threads though. I should really have done that before making a new thread so apologies for failing to do that :)
 
I would agree with the commenters that are essentially saying look at cuisines around the world where a lot of meals are vegetarian; these seem to be a lot better than substituting something for meat.

I would also reccomend you take a look at Yotam Ottolenghi's books or his newspaper column (available online as well) - the majority of it is vegetarian and is usually tasty enough to not have meat eaters complain if they are served it.
 
quorn is a protein derived from fungus as far as i rememer, it's been a while since i was dumped by veggie gf, i foumd aa good replacement for meat when using spices or sauces.
