It's under my budget by quite a bit, £50 more/less, set a max £800

That's not low profile. The low profile vengeance memory is like the one below. The one in the spec I did is also low profile.

At stock setting they will perform the same, and the LP stuff will not interfere with any CPU cooler that you may buy.

You can always go for a cooler that doesn't interfere with tall memory. Not sure about the cooler in your spec, but the one below allows for non low profile memory.
