But enjoy just playing not doing any story stuff or anythign at all.

eg.

Skyrim. Is prob the best u can just walk about and explore the world, climb mountains, go in forests etc...etc.

Far Cry 2. this looks dated to me now but at time it reminded me of treking jungles in a jeep in thailand. Even though it was africa lol. The game was a bit mediocre as it got repetitive and to much travelling.

Just Cause 2. Love just driving/flying exploring.

GTA. Like driving at night with rain listetning to tunes or getting chased by cops lol.
 
You've pretty much listed all of them, except Just Cause 2, you can't really roleplay/immerse with that game imo, as it's extremely arcadey. Not trashing the game because it's awesome for what it is, and it is a great sandbox/action game but I can't see how anyone could be immersed. :p

Another good one is The Sims, but I'll get shot for that. :D

Well it does it for me just flying about I feel like Im James bond when im flying above the facilities on the snowy mountains...then I feel like some juble expolere when i drive my bike about the jungles. then some suave dude when i get my speed boat in the ocean etc....
 
FSX with loads of mods. You can just fly about and look at your plane over all the scenery, while getting immersed in the cockpit/flying. Very fun once you know what you're doing and have it looking good.
 
Far Cry 3 can be added to that list, judging by the latest videos you can hunt animals and stuff
 
Excellent question, as this 'sandbox' type of game is the sort I enjoy the most:

Can't really add much to the suggestions already, but:

Far Cry 1 (still the best Far Cry game imho)
Far Cry 2
Skyrim (the best of the exploring games)
Fallout 3
Guild Wars 1
Guild Wars 2

I'm really looking forward to Far Cry 3!
 
What's that old game starting with an O where you wandered about on a horse just stopping every now & again to admire the views.
There's also that Cowboy game which sounds like the above but isn't.

Useful I am not. :p
