Is it the Uddingston one you're staying in? I'm not aware of a Premier Inn that close to Parkhead.
As for food, I'd head into Merchant City. It's my favourite area of Glasgow, full of great bars and restaurants.
For food there:
Indian - Dhabba
British (thinking smoked salmon, venison, amazing steak, things like that rather than bangers & mash) - Cafe Gandolfi or City Merchant
Fish - Gandolfi Fish
Bars:
Blackfriars - Real ale, really relaxed and a big mix of people from students to professionals to OAPs. My favourite bar.
O'Neils - Irish chain bar, but it's huge and good atmosphere.
Bar 91 - Relaxed, good beer (try their selection from West, a local brewery).
Metropolitan - Cocktails.
There are a bunch of other resturants including tapas, Mexican, Indian, Chinese, steakhouse. All the above bars also do food.
You could get a taxi from Parkhead, but I'd walk. A taxi would be around £6 I suppose?
People from outside of Glasgow think that it's some really rough place where everybody is a junkie and wants to murder you for fourteen pence. It's just not true, it's a friendly city, as long as you don't go walking around the really bad areas (which you won't) then you'll be fine. I feel a lot safer in Glasgow than I do in Aberdeen, Dundee or Derby.
