Just write on a napkin "ill give you everything" get them drunk and make them sign it. It won't be considered under duress or anything like that at all. Will stand up in court I would imagine.

Yes, you can get a deed of gift by engaging a solicitor to write one for you. It's the same answer that you had previously - by all means ask them if they'll do it pro bono but don't be surprised if they decline to give up their time and expertise for free.
