5V Charging

My Samsung Galaxy S2 and Nexus 7 both use Micro USB chargers. One is rated 0.7 amps and the other at 2.0 amps, both at 5 volts.

Can I interchange?

Should be fine - the devices will only draw what they require (In this case think of all the different devices that USB has to power from a PC - they all have different Amp requirements, but the voltage is set as part of the USB spec)

As far as I always understood it, which I'm sure someone will correct me, As long as voltage and polarity of a charger match, and it meets the minimum Amperage requirement then it will be fine, as the device will only draw what is required.

It'll be fine. The Nexus 7 will take a lot longer to change on the 0.7A charger though.
