the i7 for many is over kill for gaming, but i use it and as long as the game support it, which most do now days it's no worse than a i5 but for some games it's loads better.
the samsung pro is a fast sdd, the plextor while cheaper isn't far behind so either would be a good choice, i use adata pro's myself as speed v cost is great, but some don't like the controller, while i don't mind it as it works well for me.
gone for amd cards either the 7950 or 70, the 50 can be overclocked to the 70 speed but as your not overclocking i'd go for the 70 for now and not nvidia as the prices are too high v's speed gained.
ram for both builds are good quick stuff, again as your not going to overclock i have taken out the samsung green ones, as there the best overclocking ram but not needed by you, so have replaced.
still kept in a liquid cooler, as well i went oem, less warranty but there hardly ever fail so spent it on better less noise solution.
psu went for a good make and enough power if you go sli / crossfire at a later date.
cases are personnel choices, to me there just a box to hold my bits in
one build is ivy which can't be upgraded to newer cpu's when out, the other is the 2011 socket which while costs more now can be upgraded to a later cpu when released.
so it's a choice and what out of your budget you wish to spend, you didn't spec a o/s or speakers / keyboard and mouse etc, gaming mat etc
and i also wouldn't go for spending this amount of money on a i5 either, so good luck and happy gaming
