I've never seen any of the star wars films...

Utterly generic, hit all seven criteria for a hit, directly and was designed to.
Didn't make it overly bad.

Anyway OP, Watch Episode 1 - The Phantom Menace
This is the only Star Wars film you should ever watch if you watch just one.
It will tell you all you need to know about George Lucas and his movies and abilities.
 
Watch the first three for the sake of completeness, and to say that you have. However, if you know the difference between good films and bad, do not worry when you find that actually they range from mediocre (V) to bad (IV and VI). If you like them? Well, it's a free country.

I was speaking to someone the other day who mentioned about me having a couple of the old star wars games in my steam library. This moved onto conversation about the films, to which I replied I've never seen any.

Am I missing out on something that is a must watch?

Well there is no better time than now to start watching them. :)
Especially after the announcement that Disney will start filming Episode 7, ASAP. :D

There is some very strong feelings about all six movies;
What movies should/shouldn't be watched, an in what order...

I recommend watching ALL 6 movies...
An in the following order: 4/5/6 + 1/2/3
(There is a reason too that order.. But I am not telling.)

An once you watched all 6 movies.
There is literally loads of books too read (50+), to indulge your new love for Star Wars, an the incredibly detailed an extensive history an mythology.

If you haven't seen any then watch them in order (new ones first). You won't have the level of expectation of them that everyone else did and they do help with the overall story.

Don't do this, the "overall story" is a mashed together pile of rubbish that would never have been made without the power Lucas amassed making the "good" films, the original trilogy on its own is a far better story and set of films.
 
Watch 4,5,6 and sit in awe. Then watch 1,2,3. 123 get a lot of stick because they don't live up to the originals, but they're still enjoyable to watch.

Even though story wise that's the wrong way to watch it, it's the more climatic way to watch it imo.

The Machete order is a great way to watch Star Wars - IV, V, II, III, VI

There's a decent explanation why here but it is hugely spoilerific

OMG thanks, that link has details on a 720p copy of the original trilogy you can get, I didn't even know that existed <3 (I mean ORIGINAL btw not the current nonsense on bluray)
