I currently have a reference superclocked GTX 680 from EVGA, stock overclock.

I also have an AX750 PSU.

I'm assuming this would not be enough power to cover two GTX 680s in SLI?
 
what is the rest of your spec?

my machine with a 3930k and three Titan's draws barely 900W at the wall (810W at the PSU), so I would be surprised if 2 680's and I'm guessing a quad core will draw more than 600-700W

Wow...3 Titans!

Even the chaps over at Rockstar North and Konami dont run machines that high spec'd for testing their games.
