Opinel no 6, 7 or 8 depending on your preference.

It is a locker, so not an edc, but for use while hunting will be fine :)

I presume you mean for paunching/gralloching game etc?

Not much use for a paunching/skinning knife, as there's not much need for a rope cutting blade (the serrated bit) - that's more of a multi-purpose/camping knife. It's also a locker, which means again, it can't be an edc knife. The point looks quite steep as well, meaning it could be harder to accurately open the abdomen without piercing the guts (trust me, you do not want to do that!). The Opinel's are a less step drop, meaning it's easier to keep the edge away from the intestines.

The Opinels are tried and tested field knives imho of course and are very easy to keep sharp.
