De-branding wrist watch dial?

Surely without the brand people will assume it's a cheap watch?

Not really, on a quality watch you can see that it’s not a cheap watch in the flesh without even having to look at the brand name on the dial.

But the only people who look at others peoples watches, are people who care about watches.

I mean to me you could have mickey mouse on your wrist and I wouldn't take notice, to me a watch is just to tell the time, only way I'd be able to tell is if it had a brand name when I looked at it.

Exactly that. Why would you look at, and then want to look at the brand of someone's watch if a watch is only to tell the time to you. That just sounds like you want to see if they're wearing something branded or not in which case that line of thinking is no different to those who only look for brand names in all walks of 'modern' fashion from clothing to gadgets.
