New Parts, Case, Psu and fans advice please

Hey all,
My old pc is starting to get a bit noisy, so I'm going to replace all the fans, and while I'm at it, a new case and Psu.

The case Ive decided on is the:
Antec P280
The Psu is a toss up between the:
Corsair Professional Series AX 760W '80 Plus Platinum' Modular Power Supply
and the
Corsair Professional Series HX+ 850W '80+ Gold' Modular Power Supply

My current system which Im happy with for the time being is this:

*OVERCLOCKED* Intel Core i7 930 2.80GHz @ 4.00GHz Max / Asus P6X58D-E Intel X58 (Socket 1366) DDR3 Motherboard / Corsair XMS3 6GB (3x2GB) DDR3 PC3-12800C9 (1600MHz) Tri-Channel DDR3 Bundle
AMD Radeon HD 6800 series 1024mb GDDR5 Core clock 775mhz Memory clock 1000mhz

As you can see from the pic below, it's not the tidiest case in the world!
So I thought Id replace the mish mash of hdd cables and maybe the cpu cooler or just the fan itself.

So in summary:D
Which PSU would be best for me?
Are there any particular hdd cables that would be beneficial?
What fan or maybe whole psu cooler would be the quietest?

I like your case choice..

Why are you replacing your HX 620w? any problems with it? If it all still works properly its a great Power supply, i see no reason to get rid.. Though if you want to reduce the noise, a Bequiet PSU would be a good shout:

Nothing wrong with my current psu, but I was reading about a psu that doesnt have the fans kick in until a certain amount of power is being drawn and these came up.
Also my card is: Sapphire HD 6850 1GB GDDR5

Thats fair enough, Adaptive fans are useful. Though there are other (better and cheaper) PSU's that do the same, All of the Seasonic G series do, this one would be more than good enough:

As for Case fans, AF120's.. Use the 7V adaptor and they should be as silent as a lamb:
