They seem to be getting scarce now and going up in price so would a 3570k be a better option?

Get the 2500K if you find it cheap and keep an eye if you see any cheap 2600K also.
Almost 3 years later, they are still superb chips and holding very well.
I do regret back in 2011 didn't bought one and went to the T1090. (from Q6600).

Me too. Had mine since launch and it hasn't missed a beat running at 4.5Ghz ever since.I have one and see no reason to update.
