Eggy tuna on a baked potato... cheap, delicious, quick and dirty...

Ok, fine, this is not even remotely gourmet cuisine, and I'm sure someone here has tried it before, but... :o

  • 1 tin of tuna
  • Half an onion, chopped finely
  • 3 mushrooms, chopped finely
  • 2 or 3 eggs
  • A baked potato with a liberal dollop of melted butter

Get your potato baking, then 10 minutes before it finishes...

  1. Heat up your pan, put in some (preferably olive) oil, and dump in the onion and mushroom and fry till golden.
  2. Add tuna, season with a wee bit of salt and pepper according to taste, and fry until it has absorbed the oil and mixed nicely with the onion and mushies.
  3. Crack the eggs and add them to the mix, stirring until it scrambles into a lovely consistency.
  4. Get the spud out of the oven and onto a plate, cut and add butter, then pile on the by now deliriously awesome-smelling eggy tuna.

I discovered this by accident the other day when I came home from work and couldn't find anything to eat, so just grabbed whatever I thought would be filling and nutritious. Admittedly, I added onion and mushroom on my second attempt as a refinement to the taste.

It delivers. :D

Sounds good actually, probably an ideal post-gym snack. Pre-microwave baked potatoes for extra speed?

Lots of good protein in there. Might add a few stalks of broccoli on the side.

Yup, back when I worked out I used to come home and eat a tin of tuna and baked beans mixed together as a post-gym snack... but this is miles better! Of course, as I'm not working out at the moment, then it's purely as a tasty post-work evening meal. The egg really does mix fantastically with the tuna. :)

PS: I did actually pre-microwave the spud, but I didn't post it as a lot of people prefer it to traditional way, so I thought I'd let them make their mind up.

Quite a cool idea. I don't tend to eat baked potatoes but if I did I'd be all over this :)

Hmm, what do you like that you could replace the spud with?
 
Not my bag at all, I don't believe tinned tuna belongs anywhere near scrambled eggs.

Tuna and eggs have long gone together, they are very compatible in terms of taste, hence you find them together on salads and in sandwiches. Eggs and fish in general, in fact. Delicious.

Just sent this to me GF, she's sold on the idea. Maybe in a smaller portion, sounds a bit much as is!

Egg and potato are not compatible? Egg and chips? :eek:

I have to say, there's a bloke round here who does these awesome wraps.

Well spiced beef/ chicken/ paneer/ fish, then you pick what you want in it.

I usually tend to go beef, pan fried potato, 3 eggs, spinach and loads of chilli and onion. Best wraps ever. Potato and egg is the best.
 
The onions and mushrooms are a nice twist, will try this later :cool:

Fair bit of protein too.

Isn't this just a baked spud with a tuna/mushroom omelette chucked on top?:p I'd eat it anyway, perfect post workout snack as already mentioned, a bit of grated cheese on top and maybe some fresh baby plum or cherry tomato fried up with the mushroom/onion/tuna would be a good addition and a splash of Worcs sauce after you've grated the cheese on.

As someone who cooks a ton of omelettes I can safely say that it's different enough not to remind you of an omelette. The egg separates into smaller pieces, and really takes on the flavour of the surrounding ingredients. The texture is also firmer.

To be honest I could easily eat it by itself without the potato as a pre-going out snack to give some quick yet decent sustenance and energy. :)
 
Its a nice mix inside a tuna plait as well.

1 roll-out pastry.

Filling of tuna, onion, cheese and 2 eggs , salt and pepper(all mixed in a bowl).

Slap into middle of pastry. Fold over/in sides and top and bottom.

Bake for 30 mins on a tray.

If your feeling posh you can brush with milk to make it go brown, or add sweetcorn into the mix.

Serve sliced with salad and a cheese sauce (if no cheese in plait), or baked beans and mash.

Don't think you could use mushrooms though, don't think they would cook properly.
