What one gift would you give to a chef?

Assuming reading material is a suitable avenue to explore, here's a few suggestions for you - budget varies as you've not been specific on that front.

If they are the adventurous type who likes to experiment, and has a hand in recipe development for their kitchen, I'd get them a copy of The Flavour Thesaurus.

If they are the sort of person with an interest in foreign cuisines and like to keep abreast of current affairs, I'd go for a year's subscription to Saveur.

If they are into their food photography, know their Michelin stars and would enjoy a fantastic coffee table book, get them a copy of Mugaritz: A Natural Science of Cooking.

If they are the scholarly type who wants to know more about their profession, a copy of McGee on Food and Cooking may be appropriate, although it's tough going and badly needs updating.

If they are into foraging, have a classical background and would appreciate something to cook from, I'd highly recommend Essence.
 
Yeah I spotted that but that wasn't so amusing... ;)

It's so annoying when there's something that' so easily available overseas that you just can't get without a lot of hassle over here!!
 
If you ask really nicely they'll waive the fee, but the shipping and import duty makes it hardly worth the effort.

I'll stock up again the next time I'm in NY and grab a couple of Richmond's which look like a nice alternative :D
