I have a partition on current SSD, the E drive. If I copy all the stuff from E onto the new SSD, and then give new SSD drive letter E, and change letter of old E drive to something else... will that just work? . Programs launching correctly from new SSD?

You need to clone the drive. Marcum reflect is ace, and free!
