Brad Pitts character appearing numerous times as flashes in Fight Club before he is introduced. Amazing how no one see's it untill they know its there.

C3PO and R2D2 in Raiders of the Lost Ark on the wall of the Temple. Possibly my favourite easter egg ever.
THX-1138 gets referenced in pretty much every Lucas film. Detention block 1138, cars from THX-1138 and so on.
C3P0's metal skin is in the background of Watto's junk shop. Missing a lower leg too, so that explains why 3PO has a silver one later on. Also appears to have something very similar to Vader's suit in there.
Also has hidden appearances by Deckard's Spinner from Blade Runner, Indiana Jones, Howard The Duck, Flying car from Metropolis, Tank from Indiana Jones and the Last Crusade, USS Enterprise, XB-70 Valkyrie...
In the Episode 2 chase scene, there is an X-Wing being chased by 2 Tie Fighters and a Tie Advanced

Not an easter egg at all but I had watched Saving Private Ryan about 10 times before ever watching it in HD. On first HD viewing on the beach landing was the first time I noticed the medic being shot in the thigh and the water from his canteen turning red.
