Can I just confirm please as I'm making some cheese steaks for tomorrow afternoon.

What the yanks call minute steak, is that what we call thin cut frying steak or something different?

I use flatiron steak when I make Philly Melt cheesesteaks. Amazingly tender and amazingly cheap. Recipes say ribeye or sirloin but if you slice the steak thin enough it's difficult to tell the difference when it is drenched in cheese, peppers, onions and mushroom.
