I'm hoping to be building a new PC soon and while to start with I'll probably go for a single 780 the longer term plan will be to get 2 of them in SLI.
I will probably aim to do some moderate overclocking on them but especially once SLI'd, stability and quietness will be my most important requirements.
Now I can see there is a wide range of cards with very different coolers so are there any in particular I should be looking at or avoiding?

Reference cards are best for SLI as they dump heat out the back of the case.
+1 I went for the highest overclock and non reference design I could find at the time, I had nothing but problems trying to keep the top ones temps down and had to do quite a few mods.

Then consider if you really want SLI you will need a much faster Intel based CPU+Mobo etc etc to get the full benefit.
SLI needs a very fast system & 780's would be a total waste unless your display is 1440 or higher & or you have more than 1 screen.
Buy a better SSD as well those Bigfoot SE's are pretty poor (I still have one its terribly slow nowadays) compared to recent SSD's from Intel, Samsung & Plextor. You will get a much better gaming boost from a newer faster SSD with a single GTX 780 Ti than SLI!
