Surprisingly enough I made this the other day. I usually just wing it when I make something new, so you might like to adjust the recipe to your taste:
Corn Tortillas
Onion x 2, Finely Diced
Vine Tomatoes x 2, Diced
Green Chili x 1-3, Finely Sliced
Garlic x 2 Cloves, Crushed/Minced
Smoked Streaky Bacon x 3 rashers, Finely Sliced
Chicken Breast x 2, Chopped
Paprika x 1 tbsp
Cumin x 1 tsp
Ground Allspice x 1 tsp
Coriander x 1 handful chopped
Cider Vinegar
Salt
Black Pepper
Oil
1. Fry Bacon until crispy, add onions and soften, then add garlic and chili and cook until onions are golden.
2. Add tomatoes, a little drizzle of vinegar and some salt (helps break down tomatoes) and cook until tomatoes break down some.
3. Add spices, chicken and a
small amount of water (not even enough to come half way up the chicken). Cook until chicken is done and sauce is thick, then adjust seasoning and add coriander.
Serve however you like. I just had the sauce inside the tortillas with a bit of mature cheddar on the top and baked for 5 mins. If I was putting in effort I'd make my own Guacamole and bean mush (refried beans
