Recommend me some Vegi recipes

pretty much as it says on the tin, trying to cut down on (or cut out) meat/fish and looking for some nice veg recipes.
 
We tend to just eat lots of salads with the occasional piece of fish, but I guess we're a bit more specialised being mostly raw foods, so don't cook much.

Incorporate more seeds and nuts, chia seeds especially, lots of spinach, lentils and beans, chickpeas, grains. Quinoa is fantastic and cheap in the UK iirc.

We also got a book recently which is fantastic, will get its name for you when I'm back off holiday..
 
Get Plenty by Ottolenghi and read his blog on the Guardian, so many outstanding veggie receipes :cool:
 
With all the spoils from my garden at the moment I'm enjoying ratatouille, I use this recipe by Mr Wittingstall and then have it with whatever else we have going spare such as pasta, cous cous, rice, salad or even some nice bread.

Quite a big fan of vegetable curry as well, I've done this one many times and it's VERY easy and tastes great. I plan on making this over the weekend to go with some leftovers.

I'm not a HFW fanboi but just slowly working my way through his veg book I got for Christmas and to be honest it's quite accessible for the amature cook with no time to experiment.

Nigel Slater has some good veggie recipes (again, got a few books of his for Christmas that I flick through every now and then). Again I find his books quite nice to follow and have always turned out great first time.

Thanks chaps, i'll be sure to check the beebs section and go have a look for the HFW cookbook, I have his meat book and that was excellent. Never tried Nigel Slaters recipes so will look into them.

I do like my meat & fish but want to change the balance so that it's once or twice a week instead of once or twice a day.
 
Moussaka made with green lentils. Recipes from an old cookbook but I'm sure there'll be something similar online.
 
I'll deffo check out Ottolenghi, i'm not particularly against eating animals (although I won't eat factory farmed stuff for moral and taste reasons) - his philosophy sounds similar.
 
asda veggie meat balls are pretty good and the sausages aren't to bad either.

qourn pieces and mince are pretty good too if you get the urge for pasta or something.

just fry them first so they keep the texture and don't go to mush

Yeah for sure, he's an unashamed meat eater and one of his anecdotes in Plenty is that he accidentally suggested in his (veggie) Guardian column that the dish would go down brilliantly with some grilled lamb chops - cue flaming from irritated vegetarian Guardianistas :p
 
Why do you want to cut down on eating meat/ fish? Just lose your job or something?

I'm mostly curious.

Tapas is good veggie, nice bit of salad, some vine leafs stuffed with feta, little bit of rice, decent bean stew, cheeses, bread. Whatever really, love tapas and I rarely eat meat with it.
