All depends on how many fps you want really. I'm running one 970 @ 1440p. Fine for me currently.

I'd say a single 980 is ok for 1440p, SLI is good if you are going for 144hz (RoG Swift).

Yes probably and as been said 2 x 970 would be far better price/performance.... But if you have the money, Christmas is the time of generosity, who cares if its to yourself!

I run two 980's in SLI for a ROG Swift. Is it expensive? Yeah. Do I regret it. Nope.
Do they get used fully? Damn straight. In FC4 i'm seeing very high usage numbers on both cards. Then again I'm aiming for 120fps-ish with gsync enabled.

Value is in the eye of the beholder though

I have EVGA 980 Superclock SLI for 1400p which i swapped for two 780ti ref, they are a little faster. Worth it to most nope to me yes.

Depends on the game
