Advice required for the below please. Single rib of beef to share. Was thinking Chateaubriand style to serve?

After that, you should take his portion from the perfectly medium-rare beef, slice it, and either toss it in the microwave for a few minutes, or back into the oven until it is the desired shade of dry.

Yup that article is awesome, followed it at Christmas for a 3 rib roast and it came out absolutely perfect.

Dried it off as much as I can with kitchen roll then salted it and put it on a rack in the fridge till tonight.

Bought some charcoal. Think I'm going to bbq it hot :)

I did that once in a butchers.

Can I have a nice big piece of Fillet.

Certainly Sir how much (whilst putting the meat on the board) I quickly said yeah that much.

He looked at me an weighed it and laughed when he said £195.

I said maybe NOT quite so much:D
 
Interesting, although I can see where it's coming from - will have to try making them. Which Hawksmoor book is that? I don't recall seeing that recipe in mine.
