Pancake Day!!!!!!

Although I have pancakes at least once a week for breakfast, tonight if I get home in time For the main course a selection of the following:

Ground beef, onions, butter and thyme.
prosciutto and melon
Goats cheese, rucola and red onion marmalade.
Spin ache and ricotta
Feta cheese, cherry tomatoes and rucola
Ham and cheese
Ham leek and mushroom


For desert, caramelized orange segments flatbed in Grand mariner

Ahh the Brittany savoury crepe :) Ham, Cheese and break an egg into it before folding it.
 
First time i have ever made pancakes! Might not look much but they were tasty!

I'm about to cook a load for 5 of us. Doing a round of savoury and then 2 or 3 rounds of sweet.

Savoury is going to be ham, cheese (cheddar or mozzarella), onion and maybe some fresh basil.

Sweet is either Nutella or the very best which is the original lemon and sugar.

Question - I've never had to do batches before. What's the best way to get the cheese melted in them and serve like 5 warm all at the same time? I'm thinking oven in a dish on low heat once the initial pancake is done in pan obvo. This sound right?
 
My wife just made me 4 large pancakes ( i work from home, she is a teaching assistant and it is 1/2 term)

I made 6 for us all. (I don't work from home but I'm off shift, my wife is a finance assistant and my son is 5 and unemployed, he's not claiming benefits though)

I got some of that reeces peanut better spread in mine to try, was average. Reminded why I only make these once per year. Meh.
 
Had crêpes filled with chicken & white wine sauce for dinner, tried some flourless banana pancakes afterwards with nutella - surprisingly not bad.

I've also seen 'healthy' pancakes made with only a banana and a couple of eggs so might give this a try out of curiosity!

Well i made one of those banana ones instead of a normal pancake and it was actually ok!

Just used 2 eggs, a banana, a pinch of baking powder and some cinnamon and cooked in coconut oil. Had it with nutella on!

The texture was a bit strange, kind of half way between fluffy pancake and omelette, but it tasted pretty good!
 
Flour, eggs, milk, touch of cream, nutmeg, pinch of salt, rum, vanilla essence and a little icing sugar.

Bacon and maple syrup.
Ham mushroom and cheese.

3 of each.

Yeah, had chips on the side and I don't think they were needed - as it was very filling. Will definitely try a few variations on it again.
 
Just standard crepe recipe.

For the chicken and mushroom filling:

Chicken
Mushroom
Onions
Garlic
Mixed herbs
Salt
Paprika
Double Cream
White Wine

I normally fry off the onions and mushrooms then put them aside, the fry the chicken, once browned add the onions and mushrooms back, season to taste add herbs and spices, and add garlic. Then add the cream, and add wine to create a thin sauce, add a bit of butter if you want to enrich it a little. Let simmer on low heat but not too long that it evaporates.

Spoon into pancakes, fold them so they don't leak, place on roasting tray, grate some gruyere cheese ontop and either grill lightly or place in oven so that the cheese melts and you get an ever so slight crisping of the edges of the pancake.

Not masterchef by any standards - but delicious nonetheless. :)
 
No-one's mentioned ice-cream yet?! :confused:

Flip it, smear nutella on half of it whilst still in the pan and then out the pan, ice cream in and folded.
