Holiday Recommendations?

Decided I'm gonna treat the partner to a holiday for her 20th this year. Not being particularly old thought I'd see what you guys loved.
We are both quite laid back and students so it'll be a break from the drinking life, so I was thinking more of a calm and sober retreat somewhere :D , do some nice site seeing and going out in the evening for dinner etc. Definitely staying in Europe looking at around £800 for flights and hotel.
Where would you guys recommend? I was thinking of Florence as I have Italian roots I've always wanted to go, or maybe somewhere in Greece.

Gonna stay away from Spain/Portugal as we went canaries last year, all inclusive, and wanted a different experience. Not going all inclusive again as, as snobby as this sounds, there was a lot of chavy and rude people with loud children. Looking to go out within the first 10 days of September for 7 days.

Look forward to seeing what you all think. Also any DON'TS?
 
Considered Scandinavia? Some gorgeous landscapes and cities out that way (Swe and Norway spring to mind, scenery is eye-popping). Flights should cost you about £120 return on Norwegian or Air Sweden, both flying from Gatwick/Heathrow (BA is about £120 each way, not worth the additional cost on a short haul flight unless you have the BA miles to spend).

I booked my flights to Stockholm yesterday for three weeks time, cost me the price stated above.

For £400 per person? You must be joking - the flights are cheap but nothing else is, you can't have a week in Scandinavia for £400 inc flights.
 
£800 was a rough budget tbh, no idea what i should be looking at paying. I was thinking a a long weekend to Scandinavia over the Christmas period this year or the next, gonna be going for some sun and heat this time.

Nonsense. Sure, you can be a generic tourist and spend an absolute fortune there, but there are tonnes of restaurants, hotels, and attractions that are reasonably priced and more representative of the culture. Not to mention one of the biggest pulls of going to Scandinavia - that is it's landscape - costs you nothing; in fact there is plenty to do in Scandinavia for very reasonable costs.

I'm not denying that Scandinavia is expensive, especially in the major cities (Stockholm is crazy expensive if you dont have some local knowledge) but there are ways of experiencing the same holiday/attractions or even more for less money.

Cheap Flights to Split....Cheap Ferry to HVAR island...use AIRBNB for accommodation.

I did this last year and Loved it...I just Island hopped...
 
Just the hotel and flight for 400 each. Spending/food money is seperate

If the flight is £150 (?) that leaves £250 for 7 days meaning £35pppn for accommodation. Yes I know, my maths is excellent. But that doesn't seem like much.

£70 pn, however, is pretty reasonable. Given OP states that it is their partner, I presume sharing a room won't be an issue. I personally think Scandinavia is definitely viable at this budget - Croatia is another good shout, been looking into going there with my gf at some point.

£35 pppn is the same as £70 pn when there are two people. It doesn't sound like much in Scandinavia to me.
 
Yes, but my point was that two single rooms is going to cost more than a single room with two beds, which will cost more than a single room/single bed. There are quite a few 4* hotels available in Stockholm around £70pn, for example, all reasonably well reviewed.
