Will 4-way SLI Titan X last me 5 years at 1440p?

No, the world will end in 3 years, 6 months, 3 weeks, 2 days, 4 hours, 5 minutes, 27 seconds, 13 milliseconds, 21 nanoseconds.
 
Will it last you 5 years? Maybe. But at some point a new DirectX will come in or a feature will be introduced that'll give you the urge to upgtprade.

If you buy 2 980Ti now and spend another grand on GPUs in 2-3 years time you'll spend half as much and be able to max everything for 5 years.

Well it's impossible to say for sure but quad Titan X will certainly keep you going for a good few years yet and will probably still be functioning fine in 5 years all be it with having to lower settings and miss out on whatever new features gpus will have by then.
 
Actually, looking back the AMD 6970 were released 5 years ago. I was using a pair of 6950 up until the end of last year and sure they were hitting VRAM limits but they could still run most games ok. Quad 6970s would probably still have enough grunt for most modern games and they weren't as high end as the Titan X is today and the Titan has plenty of VRAM so I'd say yeah they probably will last you 5 years.
