I've been to Fethiye, it's a bustling place. Very touristy, but still nice. The street market, when open, is massive. Loads of haggling and stuff to do there, everything is knockoff of course.
Most of the "things to do" companies are like-for-like when compared to other companies, so none really to recommend over the others. Just be aware that words like "safari" are translated very literally, e.g. we went on a "Jeep Safari" and it just meant being driven around to various places like carpet warehouses and monuments in a jeep. On the road.
They will also take every opportunity to sell you something. The carpet "factory" we visited (it's really a co-op that the local government set up) turned into a long sales pitch, but it was still informative. We learned how they are made, what makes a turkish rug different to other rugs, the history of rug making etc. etc.
However having said all that, it's all so cheap and still enjoyable that I don't complain about it. A full day of "jeep safari" cost about £16 for the two of us which included lunch.
Just take it at face value, add a pinch of salt to everything they tell you, and don't be scared to refuse things they will try to sell you and you'll have lots of fun.
