So,

I'm currently running x2 980ti's in SLI but have an old GTX 970 in my old machine gathering dust & plenty of spare slots.

Would I notice much gain by whacking that in & using it as a dedicated physx card, or would the extra heat generated offset any potential benefit?.

I doubt worth the electricity. For those handful of games that support it, use some of the power from the 980Ti's
 
I am not a great fan of dedicated PhysX cards.

I would rather run 3 way SLI and if PhysX is needed then use one of the cards already installed.
