If you're only really wanting to use it as a plex server and don't need the extra functionality of a full windows installation then go for full-fledged XPEnology 
That's what I did with my Gen8s... I only needed them as file servers.
You can use all of the Synology plugins... I don't use Plex myself, but others do.
I use cloudsync on one and that's about it for plugins on mine.
I have 2x Synology DS214js & 2x Gen8s running XPEnology... but then I also built myself my own fileserver (older than the NASes) which runs Win Server 2008R2... but then I like having fully fledged windows to remote desktop on to. If I didn't already have this, then one of the Gen8s would likely have had Win Server installed... but then I don't have to pay for licenses, so that makes a difference to my usage choice.
