780 good enough for 34inc 1440p Superwide ?

Asic is poor, my 780 was 62 and needed 1.20v at stock. You should benchmark that OC and check temps/voltage.

What does the sensors tab in GPU-z show after running a game for a bit?

I'd grab a cheap 980 (runs 1440p 21.9 great) . 980ti obviously better but double the cost of a 2nd hand 980. 780 will start to struggle bad as your already aware.

Cheap as in ? Not seen any sell south of 275

It's not that bad...I'm not convinced a 980 will be that mind blowing...

Visually nothing. But most 980's I've come across clock really well and it's the fps you want. Obviously your choice. The best just costs more. £4$ is what I'm saying in the 2nd hand 980

It's minimum fps that needed I'm locked to 60fps due to my monitor...

I run @ 60htz and 980 is great for that. I don't need more than 60 fps so anything more is wasted and I'm not going for higher refresh rates until the ludicrous pricing drops. It's easy not to notice these 144htz monitor's as I simply choose not to game on one and get all anal about it. I've too many pc screens and units to upgrade all to mega htz monitor's let alone 980ti sli in all.

If I can get one for 250 and sell my 780 I'll do it..

Indeed. Just keep looking and asking about. You need to be firm and what you require and not listen to the rabble who constantly say negative things about any cards less than top tier mega bucks ones. 60 htz looks fine to me and continues to. Your screen will suit a 980 running at 1500 mhz m8. Good luck.
