Any reason not to use a 40"+ 4k TV as a gaming and productivity screen?

Not in a hurry really, but unless I want OLED, which won't be cheap for a long time, I don't see what should I be waiting for.
The alternative is to get a 4k Acer 32" 'gaming' screen, which is horribly overpriced, but gets the input lag right

Waiting is beneficial not only for new technology, but also for the current technology, so it can mature more (and drop in price). 4k is becoming more common now, so one year can make a huge difference, as a wider selection of alternatives. G-sync and FreeSync are also something that you should pay attention to, if you intend to do PC gaming. Unfortunately, those might never even arrive to TVs, so a monitor might indeed be a better bet for you.
 
Does it have to be a "TV" or would a 40" panel with a PC compatible scaler unit be OK as there are several PC LCD/LED 40"+ monitors available from S Korean boutique manufacturers. Have a look at Dream-seller on Ebay.com for a reliable seller. AMH, Crossover, Wasabi Mango & Microboard are the more popular brands.

After having an 40" AMH 309U for a few months I settled on the Acer 34" in the end as I game more than anything else.

Well what should I be waiting for in your opinion?
What new features happened in 2016 tv that were not available in higher end 2015 tvs?
The gsync PC monitor is indeed an option but a pricey one.
If I sacrifice gsync, I get a hell lot more pixel estate for the money.

Like I said, new features isn't the only goal for waiting. When the technology matures, you'll get better quality for a lower price (or last year's model for an even lower price). So, if you already have a semi-decent set now, you might want to wait another year, and hope that new 4k TVs with better input lag will be released (for a more reasonable price). Or wait for the G-Sync/FreeSync to mature, to get better operating ranges (for a more reasonable price).

On the other hand, if you are completely disillusioned with your current set, then you might not want to wait anymore.

Depending on how much emphasis you put on PC gaming, you'll first have to decide whether or not you want G-Sync/FreeSync, which will also have lower input lag.

If you want a specific TV recommendation to compare against the Acer, then maybe take a look at the Samsung JU7500-series 4k TVs: http://www.rtings.com/tv/reviews/samsung/ju7500

At least the 48" EU version (UE48JU7500) is currently around 1000-1100€ (£850). Review here. But I couldn't find the 40" version, and not sure if there even is one in Europe.
