Picked up a prehistoric Toshiba "portable"* air-con unit and it's got a water tank. I can fill the tank and it'll run for about 3 hours and then the red light comes on and the compressor turns off.

I thought it was only air "chillers" that used water tanks?

*It takes two of us to lift it.

Sounds about right.

Mine had a water tank, I don't recall exactly, but one option would cause the tank to fill up and the other would cause it to drain/evap/be used for cooling.

I *think* the option that would cause it to drain was the one that put out the coolest air.

Never had to fill it up myself though!

If it's a normal portable A/C the water tank is to collect condensate from the coil when running, empty the tank and it should run.

This one is the other way around, it empties the tank when it's running.

Do you have a model no. and see if there is a manual on the web :)

Unusual to have a compressor and a water tank.
