So, what does the La Cuisine brain trust have planned this year?

Turkey wise, last years smoker experience was brilliant so we'll be doing that again (inject with butter, cook in smoker as hot as it will go with no wood, remove at 165f). Xmas day Neal is otherwise very normal; I always make Nigel Skater apricot stuffing with is awesome. I used to do a posh meal on Christmas Eve but I end up spending a lot of time cooking rather than relaxing so might just do steaks and a simple pudding this year. Otherwise I always make turkey pie and soup with the leftovers and some sprout, chestnut and bacon soup in the buildup. Oh and the Gordon Ramsey maple and mustard glazed ham is a winner too

What traditions do you look forward to each festive season?

I've not made plans yet but I need to get on it. Probably a selection of different meats in the sous-vide and some bread stuffing...annnnd I don't know. I'll have a think.

Can I come to yours for Christmas? ;)

As for me I usually look forward to Crème Brûlée, Plaits, Mince Pies, Pretzels and other strange treats that we only seem to make at Christmas :)

We're hosting family for the first time ever (now we've got a house big enough).

Plans so far are that the blokes visit the village pub on Christmas Day :D

Ditto

Usually go back to visit family for Christmas every year but no space there now with our youngest one being born so will be hosting instead. Haven't even thought about what we are going to make or where from yet.

I find that Christmas has become 3 months of planning and build up one day of gorging yourself and then boom it's over. It was never this way when I was a kid we spent Christmas to New Year having parties visiting relatives etc. These days the supermarkets are stopping Christmas food lines before Christmas Eve!

So this year I'm going to push for the whole hog a proper Christmas break.

Proper turkey plus trimmings for Xmas Day. Roast homemade ham or corned beef for Boxing day. Several drinks parties between Boxing Day and New Year to eat down the left overs and try some sous vide mulled wine, mulled cider etc. Maybe a special pie for New Years Day, mixed game in beer with a more adventurous choice of veg.

Some interesting veg suggestions would be welcome, stuffed baked onions? charred cabbage?

Hmmm Turkey in the smoker you say? :D

I love cooking Christmas dinner personally! 12 this year I think!

I usually just do turkey but I think I'll do another meat this year.
