Anyone ever made their own BBQ sauce/marinade?

Hi all,

I live in Portugal. And whilst there is every single ingredient under the sun available to make anything you would like. Sometimes random ready made things are hard to find. This week when wanting to do a slow cooked BBQ pulled pork, I discovered that a BBQ sauce to cook/marinade the pork in isn't readily available here.

So I've had the bright spark of attempting to make one :p

Has anyone done this? easy? hard? have a recommended recipe I can follow? :)

if your into ribs and want them fast! try the pressure cooker method and finish under the grill. my goodness!!!!
 
Not doing ribs this time. But thats a good suggestion.

However I'm a HUUUGE fan of slow cooking. Sticking it on before I go to work, come back and that smell when you open the front door...my god.
 
I've used this to good effect:

Honey
Juice and rind of a lime
Olive oil
Cumin seeds, ground
Smoked paprika
6 cloves finely chopped garlic
Chopped chillis
Ground cinnamon or mixed spice
Ground star anise

Alter the quantities to produce a paste of the right consistency - it should be thick and sticky, so it doesn't run off the meat. Go heavy on the spices, except the cinnamon.

Slash the meat, coat in the marinade, then leave it in a covered bowl overnight. No need to refrigerate - it won't go off and it needs to be at room temperature before it goes in the oven.
 
Did BBQ Pulled Pork yesterday using Glaucus's recipe - it was awesome :D

Couple of notes for it. I originally didn't blend it as I was convinced the blender would make a huge mess which I didn't have the effort to clean up.

During the cooking process some water came out of the meat (expected) and originally made the sauce look watered down/useless. Another hour or so in the slow cooker on high and it burned off most of the water and it returned to looking like a sauce again, so fear not!

SWMBO then arrived and was confident in blending it. So I removed the pork and shredded it whilst she blended it. SWMBO also added a bit more of each ingredient to thicken it back up due to the water earlier.

Here's what the pork looked like after marinading/cooking for 6 hours and shredded.

Once the sauce was blended and I had shredded the pork, I then added the pork back into the sauce and cooked it for another hour on high. Heres a pic I took just now (didn't take one at the time as we were STARVING by this point and crawling the walls with the smell)

Our dinner last night, two of these each with iceberg lettuce and sliced cherry tomato. Some crisps to go with it as well.

End taste was amazing. Will definitely be making a note of this recipe for the future :)

I can't find the recipe now on Serious Eats any more so I'm guessing it's been removed. Essentially it was a piece of pork shoulder rubbed with the following mix (they call it magic dust):

1/2 cup paprika
1/4 cup kosher salt, finely ground
1/4 cup sugar
2 tablespoons mustard powder
1/4 cup chilli powder
1/4 cup ground cumin
2 tablespoons ground black pepper
1/4 cup granulated garlic
2 tablespoons cayenne

This makes a lot of rub so store it for other things. The pork was then placed onto a bed of sliced onions in the bottom of a slow cooker and cooked for either 4 hours on high or 8 on low (I did it on low).

Once cooked shred and add the following BBQ sauce:

This is really easy to make and uses the 'Magic Dust' from above. It makes a lovely sauce and the above is enough to mix into the pulled pork and to serve on the side as well.

If anything the sauce is worth making on it's own, it makes a very nice BBQ sauce IMO.
