Euro truck simulator
Stardew Valley
Brothers
Kerbal space program (i find it relaxing building ships)
Terraria
Banished ( but can get stressful late game )
I mainly associate 'relaxing' titles with turn-based strategy with easy to medium difficulty. Would that be interesting? If so, I'd have quite a number to recommend (all non-military ones).

Thomas Was Alone. Not particularly challenging but an extremely charming platformer with great narrative and a good soundtrack. Assuming you haven't already played it
The Warlock of Firetop Mountain! It's my current favourite game for playing alongside watching TV shows and what not. All turn based and loads of content to explore!
