Kerbal space program (i find it relaxing building ships)
Terraria
Banished ( but can get stressful late game )

Ark is a good shout with when played single player with increased gather and tame rate

How's the Roccat Sova? I have the Razer Turret and I love it, I was going to buy the Sova but it got delayed so I bought the Turret on release instead
 
I mainly associate 'relaxing' titles with turn-based strategy with easy to medium difficulty. Would that be interesting? If so, I'd have quite a number to recommend (all non-military ones).
 
Relaxing games? Many.

Elite Dangerous (if you do exploration)
Cities Skylines
Sim City 2013
Kerbal Space program.

And while talking about Planet coaster, you can sink the rest few months of you life trying to make something similar to this

Thomas Was Alone. Not particularly challenging but an extremely charming platformer with great narrative and a good soundtrack. Assuming you haven't already played it :)
