I see this is the 1151 socket but there is 1151 v1 and 1151 v2 ?

Also what does the z370 stand for im so confused.

Z370 is the chipset, the controllers for all the PC systems and CPU etc.

You are correct the i7-8700 is an 8th generation cpu and requires a z370 board.
One of these will be fine https://www.overclockers.co.uk/pc-components/motherboards/intel/lga-1151-z370-chipset
but which board depends on you needs for ports ect or if you plan to overclock.
