is it even possible to remove from a car interior?

i've tried going hell for leather with a vacuum cleaner and sticky rollers to no avail.

Possibly relevant - what sort of dog? I've got a Golden Retriever and never had a problem with a normal vacuum cleaner.

previous owner had a border terrier, they did a decent job of covers etc but there's still a fair amount around on seats and the boot

Have you tried the "spray lightly with water and sweep with rubber gloves" maneuver? That's supposed to encourage hair out.

Get a rubber glove and rub it across the carpet, the static helps to pull the hair out of the fibres.

no i havent, but i'll give it a go. there's a strip across the bottom of the rear seats in the boot that wasn't covered by the protective mats and is thick with hair, and there's plenty of errant strands around the rest of the interior.

i have a cat, so i'm hoping if i can get it all out it won't get topped up, i'm very much in the "clean it right at the start then just don't get it dirty" school of not having to spend 4 hours washing out car interiors.
