I presume you wouldn't follow through and ask them to cancel if you were legitimately leaving?
Would the new provider sort all that out?
(Never switched providers before hence the n00b q's)

Of course not, if you can't be bothered in actually switching then you have until the day before you're due to leave to cancel your cancel. Chances are though retention will have called you before that though.

My 12month new customer offer ended 2 weeks ago. Phoned them up and asked if they can offer me a new deal. Ended up with £61 with Sky Sports HD and 100/10 broadband.

I take it you can't alter the DNS settings with the Superhub 3? Needs to be in modem mode with a separate router?
Correct. I use PiHole and at the beginning had to configure DNS for each device. After buying a separate router and putting the SH3 in modem mode, everything on the network uses PiHole for adblocking.

Which TV package was that with? Big or Bigger (or what ever they call it now?!)
Wasn't a TV package deal per se. I was originally on the Player bundle but asked if I could get Sky Sports put on during renewal. So it's still a Player bundle just with Sky Sports HD on top.

Received an email telling my my monthly fee would be increasing by £3.50 per month from 1st September :(
Also noticed a discount on my account had ended. Currently paying £43 p/m for 350 meg, no phone or TV.
First person I spoke to told me the best they could do would be a £2.50 discount so I told them to cancel the contract.
I was transferred to retentions and who offered 350 for £39.50 which I've accepted.
