I'm about to get a ultra portable laptop with a Pentium N4200 or N5000. These are quite old CPUs now, is there anything new around the corner in the world of super low power CPUs (they're all 6 watts ish)

Ice Lake Y series. Down to 9w.

It's not just about the CPU - you need to take display, GPU, ram, etc. power usage into account as well. Look at Intel's Project Athena.
