I don't quite understand what you mean by wider field of view.
Regardless assuming the 34"/35" have are 1440p and the 38" is 1600p, and you have the monitors showing the exact same size image, and you are sitting at the same distance then:
38" compared to 34" an image will look 0.8% bigger
and for perspective 35" compared to 34" will look 3.0% bigger.
Because 21:9 is a popular ratio used in games, and 24:10 is 21.6:9 which is close enough to 21:9 that you won't notice any difference in games. To me, the most striking thing with the 38" monitors if their extra width.
