XS Max has better display, its oled as well. Not to mention thinner bezels, more RAM (3 vs 4gb I believe)
11 has better processor and a better camera.

This sums it up well. The screen on the XS Max is larger and better (OLED). The XS Max was the 'flagship' of 2018 and has been directly replaced by the 11 Pro Max.
I would choose the XS Max as I value the screen more and the camera is still excellent. Regarding speed, the XS Max is already so fast, not sure if you would really notice the increase in processing power in the 11 in real world applications. However, the 11 is one year newer meaning it will be supported by an extra year of iOS releases than the XS Max (based on previous patterns). The XS Max prob. still has at least 3 years more releases ahead though.
