If it smells ok and hasn’t lost its consistency then I would eat it

This is true as more of a general life lesson as well.

I’ve eaten them a week past their use by dates and been fine.

One easy way to tell is if the top is bulging its probably gone off, as the fermentation process has begun (its started rotting and giving off gas, hence the bulge).
