Which Nintendo eshops from around the world are easy to buy from with UK debit/credit card or PayPal

I have been looking at cheaper prices on other Nintendo eshops around the world.

I've read some are a real pain to use UK credit cards including international fee free (Hailfax clarity card etc) and even PayPal...

Which of the countries are easy to buy from? With PayPal or a UK credit / debit card?

I swapped my account over today and bought Stardew Valley, I have some points on my S.A account, so I was thinking of just leaving my account set to South Africa in the short term, until I need to switch regions again, for perhaps a U.K only deal.

Any disadvantages to leaving my Switch set to S.A ? other than the eShop been the S.A store?

Only that your news feed will be for South Africa.

On your account settings page on Nintendo’s website.

I changed mine via the Nintendo website, please note when switching countries, you will lose any credits or coins on your account.

That's not quite correct. All your gold points will still be there when you switch your account back.

I do believe that you cannot switch region if you have funds on your account unless they changed that, but I have never put on more than I needed anyway so I don't have that issue.

You also can't switch if you have an old NNID (3DS/Wii U) connected to your Nintendo account so you need to unlink them first.
