Is there any reason these seem to be all but unavailable? Is cross flow really that niche?

Wanted to do a neater run in my Corsair 900d which would require crossflow but really struggling to find many products, let alone stocked ones.

had the same problem (900D as well) for the top rad. I loved this case but if they have made it 5-10mm wider it would have made fitting rads so much easier and given more options.

I gave up in the end and just went with some really fiddly fittings.

I am looking for 420mm x-flow for a while now for the same purpose(but for a different case). Seems they are either expensive and/or not available by many regular rad makers.

Yes, Crossflow rads are somewhat niche.
The main problem is that they need to have channels at both ends to accommodate the G1/4 fittings, which makes them bigger than standard U-Channel rads and problematic to fit in some (in fact, many) cases. I struggled to find ones I liked, and then further to find anywhere that stocked them. Ended up ordering from Germany.

In 480, you're looking at Alphacool NexXxos or Black Ice Nemesis... XSPC also does Crossflow, but I don't think they go up to 480.

I did identify the NexXxos 480 X-Flow which I will have to research a little bit more in depth with regards to sizing but I didn't expect this to be such a chore!

My U-Channel rad up top has a full case length hardline tube from back to front at the moment as I have watercooled controllers in the drive bays!
