DIY Desk Build - Staining Oak Desk Top

I've got a slab of Oak kitchen worktop which i'm planning to stain for a desk

I have this stain:

The instructions for the stain say to use a polyurethane varnish on top to protect it

I'm keen to give the desk a matt finish, would the varnish apply a sheen or is there anything else i should be looking to apply to protect it?
 
Not sure about the Varnish, but id recommend Osmo Top Oil. It's what I used for m Oak desk top and I was delighted with the results.

If its a good piece of solid wood, I'd sand out any imperfections first and then think about what sort of finish you want. Might be oil, might be a kind of varnish.
 
Another vote for Osmo, I asked a similar question a couple of years ago for my teak desk.

I wanted to keep a matt finish, spilt drinks and they mop up without staining.
